Court of Assise is a Tribunal!
The dish was named by a … judge, who tried this very simple, and spicy, dish, at a restaurant on the Calabrian Ionian coast (near Gioiosa Jonica).
To prepare this pasta we will need these ingredients:
· Spaghetti
· Cherry tomatoes
· Cheese (parmigiano and pecorino)
· Garlic
· Extra virgin olive oil
PREPARATION
Blanch the tomatoes, peel them and cut them in chunks.
Finely chop the garlic and fry it in a pan with oil together with the chopped chili pepper.
Let it go for a couple of minutes, then pour the tomatoes chunks and salt.
After a couple of minutes add a glass of water, crush them cherry tomatoes with the wooden spoon to disflake them, lower the heat and let it go for about 15/20 minutes until the sauce thickens.
Drain the spaghetti enough “al dente” and add theme to the pan with the sauce.
Combine half of the grated cheese and a few tablespoons of cooking water, stir for a couple of minutes mixing well, add the other half of the cheese.
Continue to sauté for another minute, pour a drizzle of raw oil and serve it immediately by adding chopped fresh parsley to the plate. Enjoy your dish.
