Ingredients
-red onion: 1 large
-garlic: 2 cloves
-cooking cream
-lemon: 1
-thyme
-white wine: 150ml
-salt
-pepper
-olive oil
-salmon
Preparation
Dice the onion and garlic.
In a high pan add a few strands of olive oil and add the onion and garlic to brown.
After they have taken on a little color, add white wine until it covers the ingredients in the pan and leave until reduced by about 30%.
Add two cubes of butter, once melted add the cooking cream, season with fresh thyme, salt and pepper.
Mix and let the sauce reduce for 1/2 minute.
In a hot pan, add a few strands of olive oil, and on a medium-high heat, add the salmon, seasoned with salt, skin side down, so that it becomes crispy.
Once the skin has browned, reduce the heat and add a few cubes of butter and some fresh thyme.
After the butter has melted, pour the melted butter over the salmon with a spoon for a few minutes. (salmon can be cooked in several ways, I prefer it cooked medium, but you can cook it longer )
Place some sauce on a plate then place over the salmon, along with some lemon. Good appetite!
